Knives

Cleaning

We recommend not to place knives or shears in the dishwasher. High temperatures and cleaning agents can discolor and damage the surface metals. The best cleaning method is to wipe/wash the knife gently and clean it in your sink with a wet cloth or soft sponge and washing-up liquid. Rinse well with water and remove all soaps/detergents from the surface. DRY IMMEDIATELY, removing as much water as possible from the blade.

Causes of corrosion

Stainless steel is only stain-resistant, not stain- or rustproof. No metal is completely “rustproof”. Do not leave acidic foodstuffs (lemon, mustard, tomato, etc.) on the knife after use (see cleaning advice above). If you do not clean your knife or scissors properly, it can cause light deposits and rust. This process is accelerated if stored with other rusty items or in high humidity environments.

How to remove rust spots

If you notice rust stains on a steel knife, the best way to remove them is with a scouring pad according to the following steps:

1. Moisten the scouring pad with water and detergent.

2. Rub rust stains with light pressure in one direction parallel to the leaf pattern.

3. Rinse thoroughly with water and wipe the blade with a soft cloth, then dry thoroughly.

Use

Do not cut through bones, as this may damage the fine edge of the blades. Do not use these tools to pierce, pry, separate or cut semi-frozen or frozen food. Do not use the blades as screwdrivers or can openers. This is not the intended purpose and may result in the knife or knife's edge bending or breaking.

Storage

Knives should be stored in a safe place, protecting the cutting edge. Knives are best stored safely and easily in a suitable knife block.

Maintaining the sharpness of a knife

Knives don't stay sharp forever. If you look at a knife under a microscope, you'll see that the edge is made up of thousands of tiny incisors. The fine teeth on the cutting edge become misaligned after prolonged use, eventually resulting in a blunt knife. It is important to realign the teeth regularly with sharpening steel or stone or a knife sharpener, to bring the cutting edge back its state.
